Green Leaf Salad

Ingredients
  

  • 5 leaves Green leaf lettuce
  • 1/4 head Iceburg lettuce
  • 1/4 cup Carrots
  • 1/4 cup Cucumber
  • 1 small Roma tomato
  • Cheese of choice (sharp shredded cheddar and crumbled feta or blue are my favorites!)
  • Dressing of choice (blue cheese and most Italians are low in carbs)

Instructions
 

  • Rinse all vegetables and pat dry
  • Chop both lettuce types and add to a large mixing bowl
  • Shred carrots or dice into small pieces and add to mixing bowl
  • Dice tomatoes into large pieces and add to mixing bowl
  • Top with cheese of your choice
  • Serve in salad bowls and top with dressing of your coice
