I thank a former co-worker and eventual dear friend of mine for turning me on to the magic of the mojits many years ago. The traditional recipe includes sugar, which is obviously not a part of my meal plan. However, a few simple changes make this low-carb mojito a delicious masterful solution.
This version includes rum. Simply omit it for a non-alcoholic version. The diet ginger ale in this recipe, paired with the mint, lemon, and lime are quite addicting all on their own!
Masterful Mojitos
Servings 2 glasses
Ingredients
- 12 leaves fresh mint about 4 stems
- 1/2 lemon
- 1/4 lime
- 1 can diet ginger ale
- 2 oz rum
- Ice
Instructions
- Rinse mint, lemon, and lime, then pat dry
- Cut lemon in half lengthwise and in half again to make 4 wedges, set 2 of the wedges aside (to use as garnish on the glass rim); cut the two remaining wedges in half crosswise so they are smaller Note: if using large lemons, use only half the lemon to cut wedges as described above
- Cut lime in half lengthwise then in half again to make 4 wedges
- Add 1 lemon and 1 lime wedge to each glass
- Place 1 stem of mint with leaves attached in a pint glass
- Muddle* the mint and citris vigorously to release most of the juice
- Fill glasses with the desired amount of ice
- Add 1 oz rum and 1/2 can of ginger ale to each glass, stir gentle to mix
- Garnish with an additional stem of mint and a lemon wedge on the rim
- Enjoy!
