It may seem unnecessary to post a salad recipe. I mean, salads are simple – right? Cut up some lettuce, add a few other goodies, and done! Yet for some reason I thought it would be beneficial post this. This recipe includes tomatoes, but they can be excluded.
To bring a wow factor to your green salads, add baby spinach, arugula, fresh parsley, or other green leafy veggies. Step it up another notch by adding slices of hard boiled eggs, bacon bits, diced ham, or other proteins.
Green salads are a great compliment to almost every meal. Enjoy making yours as special as and unique as you!
Green Leaf Salad
Servings 4
Ingredients
- 5 leaves Green leaf lettuce
- 1/4 head Iceburg lettuce
- 1/4 cup Carrots
- 1/4 cup Cucumber
- 1 small Roma tomato
- Cheese of choice (sharp shredded cheddar and crumbled feta or blue are my favorites!)
- Dressing of choice (blue cheese and most Italians are low in carbs)
Instructions
- Rinse all vegetables and pat dry
- Chop both lettuce types and add to a large mixing bowl
- Shred carrots or dice into small pieces and add to mixing bowl
- Dice tomatoes into large pieces and add to mixing bowl
- Top with cheese of your choice
- Serve in salad bowls and top with dressing of your coice
