Buffalo Bites

These cauliflower treats are surprisingly scrumptious. Cauliflower is an interesting veggie. It has a unique (often offending) flavor and odor on it’s own, but add other flavors and it’s own seems to disappear. That is the case with these buffalo bites. I like to think of them as cauliflower wings. They’re perfect while watching the game or as a snack on a lazy afternoon.

The buffalo wing sauce makes these hard to resist. If you’re sharing with more than 3 or more other people, I strongly suggest you double the recipe.

Buffalo Bites

Ingredients

  • 1 head cauliflower
  • 1/2 cup Buffalo wing sauce
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp table salt
  • 1 cup Ranch dressing for dipping

Instructions

  • Preheat oven to 400 F
  • Rinse cauliflower and pat dry
  • Remove cauliflower's green leaves and center stock
  • Cut or break cauliflower florets into large pieces and place in a large bowl
  • In a small bowl mix wing sauce, 2 tbsp olive oil, garlic powder, and salt
  • Drizzle wing sauce mixture over cauliflower and stir to coat all florets
  • Cover a large cookie sheet in foil and coat foil with 1 tbsp olive oil
  • Spread cauliflower on the foil and bake for 30 minutes
  • Remove from oven and serve immediately with Ranch dip

Notes

Consider serving this with celery sticks and this Ranch Dressing/Dip.
