The Yakatto Mandoline Slicer is small and mighty!
I use this darling several times a week. The Yakatto Mandoline Slicer is super easy to use. The 5 different cutting plates have VERY sharp blades to make quick cuts. It can slice cheese, cucumbers, and whatever you want with ease. And it turns a zucchini into zoodles in under a minute! Here’s the manufacturer’s close up pic of the blades:
When I make Zoodle Spaghetti (if you’ve read that recipe post, you know I make it weekly), I always cut at least two zucchinis. One gets made into zoodles using the Mandoline’s 3mm Julienne blade and the other gets sliced into strips for Zucchini Lasagna using either the 2.5mm slicer or the Grate blade. The blade photo above, from the manufacturer, shows cucumbers sliced with the 1.5mm blade, but I suggest using the 2.5mm blade for those since most of us Low Carb’ers like thicker cucumbers. I like the 1.5mm blade to make small carrot circles for my salad or I shred the carrots using the 2mm Julienne blade.
This Mandoline comes with a container base to collect the veggie cuttings. The first photo in this post shows an entire large zucchini in the container. It has a soft material on the bottom to keep it from slipping on the counter top. There’s also a finger guard / gripper you can use to get every last bit of the veggie without cutting your fingers. The blades are very sharp, so be careful when cutting and also when cleaning. Veggies ranging from avocado to zucchini – and the difficult ones in between – all cut with ease. All of the parts fit nicely in the base container when storing. I store mine in the cupboard along with all of my plastic containers and it doesn’t take much space.
