This Bacon Wrapped Asparagus recipe really needs no introduction. After all, bacon and asparagus go together as well as peanut butter and chocolate. Seriously. This is a must try grill recipe that goes well with every main course we’ve put on the grill. It’s an ideal side for steak topped with sauteed mushrooms. It even goes well with burgers – especially when you’re mastering low carb and are eating your burger without the bun.
One trick to getting crispy bacon is to wrap the bacon pieces so that the sides are just touching – not overlapping. It seems the crispiness happens when the bacon isn’t sitting in its own grease – which makes grilling ideal, and when there is a bit of air flowing around the bacon. You’ll find the bacon will appear uncooked wherever it is overlapped.
Why is this important? Because you might decide to cook this in the oven. Yes, it’s completely doable! You can use a broiler pan, but I like to use a cooking-quality wire rack inside my cookie sheet. Something like this Baking/Cooling Rack (about $15 on Amazon) works well. Just put your bacon wrapped asparagus on the wrack and bake at 400 for about 10 minutes, turn the asparagus over, and cook an additional 10 minutes. You can turn on the broiler heat for a few minutes for a bit of additional crispness.
However you cook it, enjoy!
